Yesterday, finally after what surely did seem like forty days and forty nights, we finally had some sunshine. It was actually clear and bright in the morning, though it clouded in and was overcast later in the day. An interesting thing happened though, as the sun began to set in the afternoon:

Cheryl over at Tell Me a Yarn went apple picking with her family and found herself wanting a fast simple recipe to help use the fruit. That got me thinking about something my mother used to make called “Knobby Apple Cake” It’s a nice simple recipe for a nice fall dessert.
Knobby Apple Cake
1 c sugar
2 tbl soft butter
1 egg, beaten
3 c diced apples (you don’t have to peel them, but I prefer to)
1/4 c chopped nuts (optional)
1 tsp vanilla
1 c flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
Grease an 8” x 8” baking pan and pre-heat your oven to 350 degrees.
1. Cream butter and sugar together.
2. Add beaten egg and mix well.
3. Add apples, nuts and vanilla.
4. Sift flour, soda, salt and spices together. Add to the batter and mix well.
5. Pour batter into prepared pan and bake for 35-40 minutes.
Note 1: This isn’t going to look much like batter before you put it in the oven. It’s going to look as though you dropped a bunch of apples into something thick and sticky. Don’t give it a thought - it all sorts itself out while it’s baking.
Note 2: This is traditionally served with whipped cream or ice cream though it’s really good just naked too.
Note 3: I made this yesterday with pears (as I had a few that were going south), substituting a teaspoon of ginger for the cinnamon and nutmeg. It’s awesome :) And it’s even better cold than it was hot!

I try to take pictures of storm/sun contrasts too - the depth of color is so striking & immediate. All the more so since it lasts for just a minute or two!
we have a pear tree that always blesses us with lots and lots of ‘hard’ cooking pears- i’ve found they make an excellent apple substitute in almost any recipe- cake, pie, sauce, baked, etc- i think the pear is sorta the ‘eggplant of the fruit kingdom’ (but i guess eggplants are technically fruits too) as eggplant is my favorite meat substitute-
i may be making sense only to myself this morning- yeah, yeah, go ahead and say ‘so what’s new with that?’-

Bron - I think you’re right about that. The shifts come so quickly that if you don’t grab the moment, it’s gone and that brevity makes it all the more spectaclar!
Barb - Oh, to have a pear tree in the back yard! I have always loved them but only recent gave any thought to substituting them for apples. I have to say it seems to work quite well :)
And by all means go on about eggplant - I’m beginning to love the stuff myself :) You’re making perfect sense.
Oh this recipe sounds wonderful, I too have some apples that need to be put to use soon.
Marie - My mother’s apple cake was pretty good, as I recall but I have only made the pear version of this so far myself. I’m going to try the apple version later this week.

Rob - Thanks for the pointer. That is the pattern I made; Crystal Palace has been hosting it for a while now. I didn’t use a fancy fiber or anything - just nice, soft cotton. Reading through Beryl’s “preface” on Knitty, though, it occurs to me that I could make a few more and some of them could indeed be a little outrageous! Now that could be fun :)
